Kara Kuzambu

A spicy South India recipe from the cuisine of Tamil Nadu, consisting of onions, garlic and ginger blended with spiced tomatoes and finished with tamarind

     Peel and chop 2 large potatoes into 2" cubes and cook in seasoned water until just tender

     Remove from the water and allow to cool

     Heat a little vegetable oil in a wok or frying pan over a medium heat.

     Add 1 or 2 chicken breasts diced into 2" cubes and fry until cooked through.

     Add the contents of a Jar of Cop Cuisine Kara Kuzhambu sauce along with the potatoes and bring to a

     gentle simmer.

     When piping hot serve on a bed of Cop Cuisine Basmati Pilau Rice and accompany with a garlic

     and coriander naan bread.
